The Primary Objective is to give the consumer the absolute best quality product possible.

Storage of Stock
Pies can be heated from frozen or thawed. If thawing product, mark boxes using date they
enter the cool room.
Shelf life is 6 days from frozen in Chiller or Cold display case (temperature at 2 to 4C). Please
ensure you rotate stock using oldest product first.

Heating
Heating pies and associated products as quickly as possible is the best practice.
MICROWAVING NOT RECOMMENDED.

Suggested Baking Times with Convection oven
Frozen: Pies – 50 mins @ 160C
Sausage rolls – 25 mins @ 160C
Thawed: Pies – 20 mins @ 190C
Sausage rolls – 15 mins @ 190C
*Potato pies generally take longer to heat, as potato acts as an insulator. As cooking times will vary with ovens, a core temperature check of the product (minimum 75C) is required to ensure product is ready to transfer to display case.
Holding temperature for hot display case should be about 75C. (Note that the busier your
cabinet, the higher you’re holding temp will be).

Optimum Shelf life in hot display case Pies – 8 hours
Sausage Rolls – 6 hours
When adding product to case, rotate stock so oldest is sold first.

In-Store Handling Instructions

This is a guide and results can be affected by equipment type and temperature settings. Please consult your Team Manager for any store specific procedures.

Lorrie’s products are pre cooked and arrive frozen for longer storage life, to assist with reducing stock loss and to offer you the opportunity to sell frozen, thawed and cold from the deli and hot, ready to go, from your hotbox.

Products can be heated from frozen or thawed, however heating from thawed in a conventional oven is preferred to maintain optimum presentation. Whilst products may be microwaved, we recommend heating in a conventional oven to achieve best results.

Always use the ‘First in First Out’ rule – stock rotation is essential. This will ensure you are getting the best out of your Lorrie’s products.

Once thawed, shelf life is a maximum of 6 days when maintained at between 2ºC – 4ºC in a cold cabinet or chilled display.

# Potato pies may take longer to heat due to the thermal properties of potato.

Heating times may vary depending on ovens. Whilst pre cooked products do not require a temperature check, a temperature of 60ºC-70ºC is recommended prior to the products being transferred to a hot food display.

Once heated the optimum shelf life is 6 hours for Pies and 4 hours for Sausage Rolls & Quiches when maintained at 75ºC.
